Creamy Mango Mousse with Yoghurt
We’re mid-summer already, and the hot weather can’t make us stop craving something sweet. We wanted a dessert but we also wanted something quick, refreshing, and possibly something that doesn’t require baking. That is how we came up with this light, easy, cold and very aromatic dessert. Once you try this creamy mango mousse, you’ll be asking for more. You can even replace the mango puree with other fruit. This mango-banana mousse recipe serves 4.
Ingredients:
- 250 g yoghurt
- 250 g single cream
- 16 meringues
- 2 bananas
- 1 mango
- 1 tbsp sugar
Preparation:
- Peel the mango and bananas. Blend them together in a food processor and leave aside.
- Pour the cream into a bowl. Mix in the sugar until fluffy.
- Add in the yoghurt and mix until incorporated.
- Prepare 4 serving bowls or jars to serve the dessert.
- Divide the white cream into two equal sized parts, then split the first part into the four bowls.
- Crumble two meringues in each dessert bowl, then pour half of the pureed mango.
- Add the second part of the yoghurt cream, then crumble two more meringues in each bowl, and finish off with the remaining fruit puree.
Tip:
1. You can decorate your creamy mango mousse with a few more meringues and a few banana slices.
2. The amount of meringues needed varies depending on their size. If they are very big, two will be enough per serving, but if they are very small, you’ll need 6 to 8. It depends on how sweet you’ll like your mango mousse to be.
3. When you are using fruit like mango (that are pulpy and have somewhat fibrous texture) or others like raspberries (with lots of tiny seeds), it’s good to strain the puree to make it more smooth. This way you’ll get a creamy and velvety fruit mousse without any hard particles.
