These Apple Cheesecake Parfaits are a very fresh dessert. So far we have tried it only with apples, but you’ll get a great result even with pears, peaches or mango. This recipe serves 4 portions but the parfaits are quite sweet so you can serve 6 smaller portions.
If you would like to give your parfaits a fresh look, you can add a few mint leaves to the decoration.
Ingredients for 4-6 Apple Cheesecake Parfaits:
- 200 ml double cream
- 100 g cream cheese
- 100 ml sour cream
- 100 g sugar
- 50 ml apple juice
- 50 ml water
- 30 g sunflower seeds
- 4 small apples
- 3 egg yolks
- 1 pack of vanilla sugar
Preparation:
- In a small saucepan, melt 50 g sugar and 50 ml water. Stir well and remove from the heat.
- Whisk the egg yolks and sugar syrup in a double boiler until a nice, thick cream forms. Move aside and continue whisking until the cream reaches room temperature.
- In another bowl, mix together the cream cheese, sour cream and vanilla sugar.
- In a separate bowl, mix 25 g sugar with the double cream until well combined. Add the mixture to the egg yolks. Add in the cream cheese mixture and mix well. Pour into dessert molds and freeze for 2-3 hours.
- Wash and peel the apples. Cut them into small cubes.
- Caramelise the last 25 g sugar in a small saucepan over medium heat.
- Add in the apple cubes, stir well and pour the apple juice over. Leave to simmer for a few minutes, then remove from the heat and set aside to cool.
- Before serving, decorate the cheesecake parfaits with the apples and sunflower seeds.
