Chocolate Rose Sandwich Cookies with Rosehip Jam

Rose Chocolate Sandwich Cookies

It was time for my afternoon coffee and what is more appropriate to go with it other than some tasty chocolate cookies? I was in an experimental phase again, which turned out to be super successful, so now I can proudly share these chocolate rose sandwich cookies with you. They are very quick to make, especially if you decide not to sandwich them. This way you’ll get around 100 chocolate butter cookies that are more than enough even if you’re expecting a large number of guests. And if not, you can always store them in a box to have something small and sweet to accompany your coffee or tea for a long time.

Rose Sandwich Cookies

Ingredients for 50 Chocolate Rose Sandwich Cookies:

  • 275 g flour
  • 220 g butter, softened
  • 75 g icing sugar
  • 25 g cocoa
  • 1 egg
  • 1 tsp vanilla
  • ½ tsp. salt
  • 120 g rosehip jam to sandwich the cookies

Preparation:

  1. Preheat the oven to 180°С. Line a baking tray with parchment paper.
  2. Place the butter in a bowl. Sift in the icing sugar and mix until a fluffy cream is obtained.
  3. Mix in the egg, salt and vanilla.
  4. Sift the flour and cocoa into another bowl. Add them to the butter mixture and stir until a soft dough is achieved.
  5. Attach a rose nozzle (or any flower nozzle) to a piping bag and transfer the cookie dough.
  6. Pipe roses onto the baking tray. Make sure to leave some space between the rose cookies as they expand in the oven.
  7. Bake for about 10 minutes. Leave them to cool for 5 minutes while still on the tray, then transfer them onto a cooling rack or plate until completely cool.
  8. Once the chocolate rose cookies have cooled down, sandwich them together using rosehip jam.

Sandwich Cookies Roses

Tips:

  1. If you would like all your rose cookies to have the same even colour everywhere, without slightly burnt edges, place a silicone baking mat under the parchment paper. This way the cookies won’t have a direct contact with the metal tray and will bake equally.
  2. These chocolate rose sandwich cookies are delicious even without the jam, so you don’t have to necessarily sandwich them. You can even use a different jam or marmalade, it just needs to be thick.
