Greek Yogurt Dessert with Lemons
Summer is in its peak, the glorious, sunny days and dusky, warm nights are in full swing and people stay in the shade, go to the beaches to cool down or get ready for the their longest holidays throughout the year. During such a hot summer people crave mainly chilled fruit and fresh salads, cold summer soups or icy smoothies. That’s all fine but what to do if you actually want something sweet? There are all sorts of desserts but you’d probably prefer something light and refreshing. And if you can make it super quick and easy, and you hardly need any ingredients (or you need just those that you already have at home), that would be just great. It almost sounds unbelievable, doesn’t it? Well, you better believe it, just try our amazing granny’s recipe for lemon yogurt dessert and we can talk again.
Greek Yogurt Dessert Ingredients:
- 800 g Greek Yogurt (4,5%)
- 200 g biscotti
- 90 g sugar
- 1 lemon + a few lemon slices for decoration
Other necessary tools:
glass square roaster, zester, lemon squeezer
Greek Yogurt Dessert Preparation:
- Wash and dry the lemon. Finely grate the zest using the zester and squeeze the lemon juice into a cup.
- Pour the Greek style yogurt into a big bowl. Stir in the sugar, lemon zest and lemon juice.
- Arrange half of the biscotti in the square roaster (the one I’m using is 21×21 cm, you can also use a rectangular roaster but it needs to be relatively small).
- Pour the yogurt mixture over the biscotti and spread it evenly with a spatula.
- Arrange a second layer of biscotti and pour the remaining yogurt on top. Make the surface even and smooth, and chill in the fridge for 4-6 hours.
- Before serving, decorate the yogurt cake with lemon slices or lemon rind.

It lasts for only 2-3 days as the surface starts to crack up. Three days is too long anyway, I doubt that it will survive so long as once you try it, there is no turning back!
