Unicorn Marshmallow Pops
Harry came to see me in London and other than the many walks to Greeenwich, Chelsea and Kensington (you won’t believe that but the weather was amazing and it was constantly above 25°C), our mini excursion to the sea in Brighton and all the pictures we took, we had to make some food, eat and take care of our favourite blog. We carried out a few of our ideas, including one of my new obsessions – unicorns! I was constantly trying to bring them up in the conversation and my sister was laughing at me, but hey, their turn came as well and they turned out adorable. These little unicorn marshmallow pops are perfect for kids’ parties and birthday celebrations, for the International Children’s Day, or just like that – if you want to surprise the little mischief makers. Arm yourself with patience, all necessary tools and ingredients, and have lots of fun!

Unicorn Marshmallow Pops Ingredients:
- 20 marshamallows
- 50 g white chocolate
- 40 g white fondant
- 30 g fondant in different colours – pink, purple, yellow, orange, etc. (if you don’t have different colours, you can use white fondant icing, divide it into a few small balls and dye it using different food colours)
- Different types of decorations – little hearts and stars, coloured vermicelli, pearls, glimmer sugar and whatever else you can find
- Gold shimmer spray – optional
- Edible markers (mainly black and pink)
You will also need:
- 20 lollipop sticks or wooden skewers
- fondant plunger cookie cutters – flowers, hearts, stars
- thin and soft cake decorating brush – optional
- cake pops stand, Styrofoam block or egg carton (the important thing is to have something to stick your Unicorn pops in)
- icing sugar

Unicorn Marshmallow Pops Preparation:
- Start with shaping the ears and unicorn horns. Make little triangles for the ears that are thicker in the base and get thinner towards the point. This way, once you place them on top of the unicorn marshmallow heads. they will stand still and want fall of because of their own weight. You can press them in the middle with a lollipop stick or a toothpick to give them a more round shape and colour them in the middle with a pink edible marker to achieve this nice look of the inner part of the ears.
- To make a horn, pinch a bit of white fondant and twist it. Use a gold shimmer spray to give them a nice, sparkly finish, or if you have gold edible powder, you can brush them lightly.
- Roll out a bit of the pink fondant icing and don’t forget to sprinkle the working surface with powdered sugar as otherwise the fondant might stick. Using plunger fondant cutters, cut out little flowers. Shape them so they won’t look flat and have a more realistic look. Lightly brush the centre of each flower with water and place a few little decorations. Use less than a drop for each flower, it is enough to make the decoration stick.
- Repeat the procedure with all different colours fondant you have, and use other plunger cutters – hearts and stars. Set all unicorn fondant decorations aside to stiffen.
- Use black edible marker to draw the unicorn faces. You can draw sleepy or smiley eyes to give them more character. Skewer the marshmallows with lollipop sticks (or wooden skewers).
- Melt the white chocolate into a chocolate melting pot. Dip the top of each marshmallow into the bright white chocolate or use a spoon to cover the top and the back of each “unicorn head”. Sprinkle with decorations to make a colourful unicorn mane. Place a horn in the middle, and add the ears on both sides. Place a flower for the final touch.
- Stick the lollipop stick into the cake pop stand or the Styrofoam block and leave aside. Repeat the procedure with the remaining unicorn marshmallow pops.
