Creamy Carrot and Sweet Potato Soup with Coconut Milk
The soup season is here! What better way to enjoy the end of a wonderful but very chilly day than with a steaming hot creamy soup? This is one of our favourite soups, it has a unique taste, aroma and nice, thick texture. You can even spice it up with some chilli powder or extra hot sauce to warm you up even quicker and for longer. We can add a guarantee as well, after you try it, you will definitely want to have some more.
Sweet Potato Soup Ingredients:
- 1,5 l vegetable stock
- 1 кkg sweet potatoes
- 600 ml coconut milk
- 450 g carrots
- 3 garlic cloves
- 1 big onion
- 2 tbsp. olive oil
- 1 tsp. salt
- ½ cup red wine
- ½ tsp. nutmeg
Sweet Potato Soup Preparation:
- Wash and peel the potatoes and carrots.
- Peel and cut the onion and the garlic cloves.
- Heat the olive oil in a big saucepan over a medium heat. Fry the onion and garlic cloves for a few minutes, then pour in the red wine.
- Add in the carrot and sweet potatoes and fry for 4-5 minutes. Pour in the vegetable stock and leave it to simmer for 30 minutes or until the carrots have softened.
- Add the spices and coconut milk. Using a hand blender mix everything together and leave for 5 more minutes.
- Pour the sweet potato soup into bowls and serve. If you like piquant food, sprinkle spiced up olive oil, chilli powder or hot sauce.
