Cream of Broccoli Soup with Potatoes
I have no idea if I have mentioned this before but when we were little, my sis and I didn’t eat soups at all. In fact, we outright hated them! It’s so good that we have awesome parents and they have never made us eat anything we don’t like. And now… now I can hardly say no to the temptation of a steaming hot bowl of soup. Besides, this is one of the lightest dinner recipes out there.
A few days ago I was wondering what creamy soup to prepare. I wanted something different, and even better – something I haven’t tried before. I had a look at a few food blogs and somewhere I saw a cream of broccoli soup recipe. This one I have never had tried before! I started reading through many different recipes containing this green and disliked by many kids vegetable. I spent a lot of time searching and to be honest, I didn’t like a single cream of broccoli soup recipe I read! There was always something that wasn’t quite to my taste – either the combination of ingredients, or some herbs and spices, not to mention the preparation time of some of them! So in the end (as it often happens) I decided to improvise and was so happy with the end result that I’m rushing to share it with you.
Ingredients for 4 portions cream of broccoli soup:
- 500 g broccoli
- 500 g potatoes
- 200 ml milk
- 100 ml cream
- 1 cube vegetable stock
- ½ tsp. salt
- ½ tsp. nutmeg
- 1/8 tsp. black pepper
Cream of broccoli soup preparation:
- Peel the potatoes and cut them into big cubes.
- Place them in a big saucepan and pour over 1 litre hot water. Bring to the boil and leave them for 10 minutes.
- Cut out the stem of the broccoli, peel it, and if need be, cut it into big slices. Add them to the potatoes and leave everything to simmer for 10 more minutes.
- Add in the remaining part of the broccoli and the vegetable stock cube, and leave to simmer for 3-5 minutes.
- Remove the saucepan from the heat. Add in the milk, cream and spices, and blend together. Put the saucepan back on the hob for 2-3 minutes and stir periodically. If the cream of broccoli soup is too thick, add a bit of water.
Tip: If you would like to serve this Cream of Broccoli Soup beautifully, you can sprinkle finely chopped spring onions on top, add a few drops of cream or a few small pieces of broccoli – just take them out of the saucepan before you puree everything.
