Cantaloupe Melon and Prosciutto Salad
This is one of our favourite salads. There isn’t a single person that has tried it and not fallen in love with it. The combination of sweet and salty, fruit and veggies, and feta cheese coupled with honey is a real sensation. Strongly recommend it!
Ingredients:
- ½ big melon (Cantaloupe)
- 2 big tomatoes (Buffalo Heart)
- 1 green apple (or Pink Lady)
- 3 spring onions
- 100 g feta cheese
- 50 g Parma ham
- 3 tbsp. olive oil
- 2 tbsp. honey
- 2 tbsp. white balsamic vinegar
- ½ tsp. salt
- ¼ tsp. freshly ground black pepper
- Fresh parsley
Preparation:
- Cut the Cantaloupe melon into cubes and place into a salad bowl.
- Chop the tomatoes, apple and spring onions and add them to the melon.
- Cut the Parma ham into strips.
- Crumble the Feta cheese over the salad and sprinkle the ham.
- Chop the parsley.
- Pour the olive oil, white balsamic vinegar and honey into a little jar. Add the spices and the parsley, close the jar and shake well to prepare the salad dressing.
- Pour the dressing over the salad.

Idea: This salad is perfect for 4 people as an appetiser, but if you prefer to have a lighter dinner (especially in the summer), you can serve 2 bigger portions.
