Homemade Parsnip and Cheese Bread
Is there anything better than the aroma of a steaming hot homemade bread? Well, perhaps for you there is, but this is definitely one of my favourite scents! I got a breadmaker years ago and we rarely buy any bread nowadays – only if we want a French baguette or sandwich rolls. But even with a breadmaker, it is something entirely different to knead the bread yourself and to feel the dough under your hands.
I really like Enie van de Meiklokjes, and on Saturday after breakfast, I watched Enie’s cooking show. It was a bakery special, and for a change, she didn’t make lots of desserts but a few types of bread. One of them looked really scrumptious as one of the ingredients is grated parsnip, so I decided to make it. The recipe is not the same, as I didn’t write it down, and hers didn’t contain any cheese at all, but this parsnip and cheese bread is definitely one of the most delicious things I’ve ever tried! I strongly recommend to try it out, and you’ll surely be pleasantly surprised.
Ingredients for Parsnip and Cheese Bread:
- 350 g flour
- 250 m buttermilk
- 100 g parsnip
- 60 g feta cheese
- 30 g Manchego cheese
- 3 tbsp honey
- 2 tsp baking powder
- 1 tsp thyme
- 1 tsp savory herb
- ½ tsp salt
Preparation:
- Preheat the oven to 200°С.
- Wash, peel and grate the parsnip.
- Grate the Manchego cheese and crumble the feta cheese.
- Pul all ingredients into a large bowl and stir until a dough is obtained. Finish kneading the bread dough by hand. If it still too sticky, you can add more flout but not more than 10-10 g.
- Line a baking tray with parchment paper and place the bread onto it. Cut a slash down the middle and bake for about 45 minutes.
- After you take the Parsnip and Cheese bread out of the oven, wrap it in a tea towel.

Tip: If you don’t have Manchego cheese, you can replace it pretty much with any hard cheese – Parmesan or Cheddar are great!
