Savoury Pancakes with Blue Cheese and Smoked Ham
These savoury pancakes will enchant you with their elegant taste. Although one of the main ingredients is blue cheese, they are great for breakfast, wonderful for lunch and delightful as an appetiser for dinner, especially with a glass of wine. They are very quick and easy to make, don’t require a lot of ingredients or preparation, and can look very sophisticated decorated with grated Parmesan cheese and fresh parsley. You could use pretty much any hard cheese – if you prefer Manchego, Grana Padano or Pecorino, don’t think twice before sprinkling it over.
Savoury Pancakes Ingredients:
- 225 g flour
- 225 ml milk
- 150 g Gorgonzola cheese
- 125 g smoked ham
- 50 g Parmesan
- 5 eggs
- 1 tsp. sugar
- ½ tsp. salt
- ¼sprig parsley
You will also need:
2 frying pans, butter – about 15 g for frying the smoked ham and to grease the frying pan for the pancakes, silicone brush for spreading the butter, ladle, wooden spatula
Savoury Pancakes Preparation:
- In a big bowl, whisk the eggs. Stir in the flour.
- Mix in the milk, salt and sugar. Leave the pancake mixture to rest in the fridge for a few minutes.
- Cut the ham into small cubes and fry them.
- Finely chop the parsley and leave a few sprigs for decoration.
- Stir in the Gorgonzola cheese until it melts, then add the parsley.
- Heat up the other frying pan over medium heat and lightly grease the bottom with butter.
- Add a ladleful of the mixture, pour it into the middle of the frying pan and immediately start swirling it round the pan.
- Cook the pancake for approximately 40-50 seconds. Use a palette knife or a spatula to lift the pancake carefully and check if it is golden-brown before turning over. Sprinkle about 1 tablespoon of the blue cheese and the ham over half of the pancake, then fold it into 2 using the spatula. Press it in the middle, turn over and press again.
- Transfer the blue cheese pancake into a deep plate and put a lid over it to keep it warm. Repeat the procedure with the rest of the savoury pancakes.
- Before serving, grate the Parmesan cheese and sprinkle it over. Decorate with fresh parsley.
