Strawberry Tartlets
Beautiful, elegant and easy to make, these strawberry tarts not only look captivating, but also have a very nice, unobtrusive sweet taste that tickles the senses.We sort of created this recipe out of nothing, mostly because we had so many strawberries that we had to use them before they went off. We just came back from the shop with the first strawberries for the season and were so excited that we got an immense amount of them. And after we literary got stuffed, we’ve still got so many left that we rolled up our sleeves and got looking at recipes. We were thinking about making strawberry tartlets but all the recipes we found in cookbooks and online seemed so unnecessarily complicated that we decided to come up with something only using the ingredients we already had at home, and this is how this recipe was born.
Ingredients for the tartlets crust (6 big or 8 smaller strawberry tartlets):
- 200 g flour
- 125 g butter
- 70 g sugar
Ingredients for the tarts filling:
- 200 g cream cheese
- 50 g white chocolate
Ingredients for the topping:
- 350 g strawberries
- 250 ml cold water
- 25 g sugar
- 1 pack of gelatine glaze for fruit cake
Strawberry Tartlets Preparation:
- Cut the butter into cubes and put them in a bowl.
- Add in the sugar and flour. Knead a dough by hands and shape a ball.
- Divide the dough into 6 equal sized balls and place one in each tartlet tin.
- Spread the dough using your fingers to make the crust. Use a fork to prick the bottom of the crust. Put in the fridge for an hour.
- Preheat the oven to 180ºС.
- Bake for about 15 minutes until the tartlets crust is golden. Leave them in the tartlet tins until completely cool, then take them out.
- Melt the white chocolate in a water bath.
- Mix in the cream cheese until well combined and put the filling in the fridge.
- Wash the strawberries and cut them into slices.
- Pour the cream into the tartlet shells and spread it evenly. Place the strawberry slices on top.
- Pour the gelatine glaze for a fruit cake and sugar into a saucepan over medium heat. Gradually add the water while stirring constantly. Leave it to simmer and stir for 1-2 more minutes until the mixture is smooth and glassy.
- Pour the glaze over the tartlets by starting in the centre and working outwards. Leave the strawberry tartlets to cool in the fridge for an hour.

Tip:
If you would like to give your tartlets even a better look, you can melt milk and white chocolate (separately) in a water bath and decorate them using a piping bag equipped with the smallest round nozzle.
