We offer you yet another recipe for a sweet temptation. These sandwich cookies are irresistible and the recipe is very quick and easy. The appearance is nothing spectacular, but they still look elegant, soft and tangy.
Ingredients for 30 sandwich cookies:
- 300 g flour
- 225 g butter, softened
- 100 g sugar
- 1 egg
- 1 tsp. rum
- 1 tsp. baking powder
- 1 tsp. vanilla essence
- ¼ tsp. salt
Ingredients for the Mascarpone filling:
- 200 g Mascarpone cheese
- 75 g icing sugar
- 50 ml single cream
- 1 tbsp. cocoa
Mascarpone Sandwich Cookies Preparation:
- In a bowl, beat in the softened butter and the sugar until a smooth mixture forms.
- Mix in the egg, rum and vanilla.
- Sift the flour and baking powder into a separate bowl. Gradually add them to the butter mixture. Stir until you get a smooth dough.
- Preheat the oven to 180ºС. Line a large baking tray with parchment paper.
- Shape little balls (not much bigger than a walnut) with your fingertips and place them on the baking tin. Leave space between the cookies so they have room to spread out.
- Slightly flatten the cookies to 1 cm thickness with the bottom of a glass before baking.
- Bake for about 8-9 minutes. Remove from the oven and set aside for a few minutes to cool. They are very fragile and easy to break.
- To make the sandwich cookie filling, mix all ingredients.
- Take half a teaspoon of the filling and sandwich it in between two cookie shells. Repeat until you run out of cookies.
