Lemon Butter Cookies Recipe

Hello Summer! The temperature outside is rarely getting below 25°С and everyone is looking for a tiny patch of shade and a way to refresh themselves. These lemon butter cookies are perfect for anyone who, despite the heat, wants to enjoy something sweet and taste the summer on their tongue!

Our parents recently came back from a holiday from the beautiful and so beloved by us Italy. Straight away we started looking at the pictures of romantic Positano, Sorrento, Ravello, and Capri… and precisely these pictures and our parents’ stories about the lemon streets of Italy and the fresh aroma everywhere, inspired us to create this lemon butter cookies recipe.

Ingredients for 45 lemon butter cookies:

  • 325 g flour
  • 175 g butter, softened
  • 125 g sugar
  • 2 big lemons
  • 1 egg
  • 4 g vanilla sugar
  • ½ tsp baking powder
  • ½ tsp lemon essence
  • ½ tsp salt

Preparation:

  1. Sift the flour, baking powder and salt into a bowl and stir.
  2. Wash the lemons thoroughly and finely grate the rind. Squeeze the juice from half a lemon.
  3. In another bowl, beat the butter, sugar, egg, vanilla sugar, lemon essence, lemon juice and rind. Add in the flour mixture and stir until a soft dough is obtained.
  4. Wrap the lemon dough in cling film and place in the fridge for an hour. Line a baking tray with parchment paper and preheat the oven to 180°С.
  5. Take the cookie dough out of the fridge and shape small balls with the size of a small walnut. Place them onto the baking tray. Using the tines of a fork, cross mark the lemon cookies to slightly flatten them.
  6. Bake for 10 minutes. Take the lemon butter cookies out of the oven and leave them to cool down for 5 minutes. After that, transfer them onto cooling racks until completely cool.

Tips:

  1. Our lemon butter cookies taste the best when they are completely cool. You can eat them even when they’re warm but their taste and aroma get a lot more deep and saturated when they have cooled down. You can store them in a box for at least two weeks, probably even longer but they have never survived longer than that at home so we can’t say for sure.
  2. If the lemon cookie dough is too soft, it’s difficult to roll it into small balls and it’s sticky, put it back in the fridge to harden. Be quick when you’re shaping the cookies as the dough can get soft quickly.
