This banana cake is absolutely amazing because it combines two wonderfully complementary flavours – banana and chocolate. The recipe is very quick and easy – you need only 15 minutes to prepare it and you can use any baking tray of your liking. However, if you wish to surprise your other half for St. Valentine’s Day (or any other day if you feel in a romantic mood), you can use a silicone heart shaped baking tin like ours to achieve this fabulous finish. You don’t even need baking parchment for this baking tray, you can just grease it and sprinkle with a bit of flour. This banana cake tastes scrumptious even without the glaze. Happy baking!
Ingredients for the chocolate banana cake:
- 220 ml milk
- 100 g spelt flour
- 70 g all purpose flour
- 50 g sugar
- 50 g butter
- 40 g walnuts, chopped
- 30 g cocoa
- 20 g candied lemon peel cubes
- 3 ripe bananas
- 1 tsp. baking soda
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- 1/8 tsp. salt
Ingredients for the chocolate glaze:
- 30 g chocolate
- 30 g butter
- chopped walnuts – as many as you like
Preparation:
- Peel the bananas, place them in a bowl and mash with a fork.
- Preheat the oven to 180 C.
- Melt the butter in a water bath. Stir in the sugar. Add the milk and stir again.
- Into a bowl sift the two types of flour, cocoa, baking soda, cinnamon, nutmeg and salt.
- Add the liquid ingredients and the mashed bananas to the flour mixture. Add the chopped walnuts and slices of lime, and mix until combined.
- Grease a heart shaped baking tray and sprinkle with flour.
- Pour the banana cake mixture into the mould.
- Bake for about 35 minutes. Remove from the oven and leave aside to cool.
- For the chocolate glaze melt the chocolate and the butter in a water bath. Pour over the banana cake and sprinkle with chopped walnuts.
