Granny’s Easter Bunny Cookies
(Second Version)
As we all know, granny cooks the best! That’s why we are sharing one of her recipes for cookies. Even though it’s very simple, it’s connected to unforgettable memories from our childhood. We have had those cookies even as toddlers. Of course, we have always “helped” gran to make them – mostly by being under her feet, and loitering under and around the table, but in the end we have actively cut out cookies with various cookie cutters.
To make these cute Easter bunny cookies, you will need a bit of time and patience (that’s why we have chosen an easy recipe for the cookie dough). It will be even better if you have little helpers in the kitchen, they will have lots of fun shaping the bunnies as it’s like playing with play dough.
Granny’s bunny cookies will always be welcomed with a smile, but Easter is a great occasion to roll up your sleeves and get bakin’. If you are in a hurry and don’t have that much time to make the cookies, we also have an easier version of the same recipe.
Ingredients for 60 Easter Bunny Cookies:
- 500 g flour
- 165 g yogurt
- 125 g sugar
- 100 ml sunflower oil
- 2 eggs
- 2 tsp. vanilla essence
- ½ tsp. baking soda
Preparation:
- Put the baking soda in the yogurt and mix.
- In a bowl, whisk the eggs together. Mix in the sugar.
- Add in the yogurt, sunflower oil and vanilla.
- Gradually add the flour. Knead a soft dough on a lightly floured work surface.
- Preheat the oven to 180ºС. Line a large baking tray with parchment paper.
- To make one Easter bunny you will need to make a ball with the size of a walnut for the body, one a little bit smaller for the head, one even smaller ball for the fluffy tail and 2 tiny balls for the paws (as shown on the picture below). You will also need two small rolls about 4 cm (1.5 inch) each, for the ears.
- To assemble the bunny, start with the biggest dough ball. Place it on the baking tray and attach the “head”. Add the tail. Using scissors, cut each of the smallest balls in two places to shape the rabbit paws. Place the paws between the head and the body on both sides of the head. Fold the rolls in two and squeeze them on both sides. Place the ears flatways on the body, starting from the head. Use a wooden skewer or a toothpick to make the eyes and the nose.
- Repeat the procedure until you run out of dough. Leave space between the Easter bunnies.
- Bake for about 15 minutes.
