Christmas Wreath Cookies
There is only one week left until Christmas! If you’re still gathering ideas for Christmas recipes, you can try out these easy Christmas Wreath Cookies. You can sprinkle little pieces of your favourite dried fruit, pistachio or other nuts – walnuts, cashew, hazelnuts, whatever you like. You can even use little festive sprinkles as they are so easy to find – use tiny snowflakes, stars, holly leaves or gingerbread men. These Christmas cookies are perfect if you want to surprise your friends and family, you can even wrap them up as a gift.
Christmas Wreath Cookies Ingredients:
- 130 g flour
- 100 g finely chopped dried fruit and pistachio
- 120 g sugar
- 95 g corn starch
- 50 g icing sugar
- 60 g butter, softened
- 2 egg yolks
- 2 tbsp lemon juice
- 1 tsp vanilla
- 1 tsp baking powder
- ¼ tsp salt
- Grated rind from 1 lemon
Christmas Wreath Cookies Preparation:
- In a bowl, stir together the flour, corn starch, baking powder and salt.
- In another bowl, mix together the butter and sugar, until a light fluffy mixture is obtained.
- Add the egg yolks, grated lemon rind and vanilla into the butter mixture and mix well.
- Gradually add in the flour while mixing at low speed.
- Form a ball out of the dough and wrap it into cling film. Place in the fridge to chill for an hour.
- Preheat the oven to 180 C.
- Dust your work surface with flour and roll out the dough until it’s 0.4 cm thick. Cut out your Christmas wreath cookies using round cookie cutters (6 cm). Then cut out the centre of each cookie using a 2 cm round cookie cutter.
- Line a large baking tray with parchment paper and place the cookies onto it leaving space between them. Put in the fridge one more time for about 15 minutes and bake for 12 minutes. Set aside until completely cool.
- In a small bowl, mix together the powdered sugar and lemon juice to make the cookie icing. Spread the icing onto the cookies and sprinkle with the dried fruit and pistachio pieces. Leave aside to dry.
