I don’t know a single person that doesn’t like pizza. Seriously. Perhaps this is due to the fact that anyone can order or prepare what they like according to their mood or food preference. It may be a vegetarian pizza topped with different veggies or several types of meat, sausages and salamis, you can have as many types of cheese and as much as you like, and the variety and combinations are endless. Although the first association that pops into mind is a large and thin flat bread covered with goodies, we shouldn’t forget another classic in the genre – precisely, a closed pizza calzone. This time we decided to serve it in the form of bites, so this is a great idea if you’re expecting guests or you need a recipe for an anytime snack.
Ingredients for the pizza base – 15 mini pizzas:
- 250 g flour
- 150 ml water
- 1 tbsp. olive oil
- 1 tsp. dry yeast
- ½ tsp. salt
Ingredients for the pizza filling:
- 175 g Cheddar cheese
- 120 g mushrooms
- 110 g chorizo
- 75 g tomato puree
- ¼ tsp. savory
- ¼ tsp. thyme
- ¼ tsp. basil
- ¼ tsp. oregano
- cling film

- square cookie cutter (10 cm)

Preparation:
- Place the flour in a bowl. Add in the water, olive oil, salt and dry yeast, and knead a soft dough.
- Wrap the pizza dough in cling film and set aside to rest for about 30 minutes.
- Chop the mushrooms and grate the cheese.
- Chop the chorizo nice and fine.
- Pour the tomato puree into a little bowl and stir in the herbs and salt.
- Preheat the oven to 180ºС. Line a baking tray with parchment paper.
- Roll out the pizza dough until it’s super thin (2 mm) on a floured surface.
- Using the square cookie cutter cut out as many pizza squares as possible. Gather the remaining dough into a ball, reroll and cut additional squares. Repeat the procedure until you run out of dough.
- Smear tomato puree over half of the squares.
- Leave 35 g of the cheese aside. Lay the remaining cheese, chorizo and mushrooms equally.
- Place the remaining dough squares on top.
- Using a fork, press down the edges to seal them.
- Place the mini calzones on the baking tray and bake for about 30 minutes. Sprinkle the remaining cheese over the pizzas 5 minutes before you take them out of the oven.
