Who doesn’t love having muffins for breakfast? It’s like having the day off or having a nice coffee in the morning in Starbucks while checking your email on your laptop and looking hipster. Well, if you want to get the same feeling, or simply have a delicious and healthy breakfast, I recommend trying this Whole Wheat Blueberry Muffins recipe.
Ingredients:
- 225 g yogurt
- 150 g plain flour
- 85 g wholegrain flour
- 140 g blueberries
- 100 g unrefined brown sugar
- 30 g wheat germ
- 1 egg
- 4 Tbsp. sunflower oil
- 3 Tbsp. lemon juice
- 2 Tsp. baking soda
- 1 Tsp. vanilla
- Zest of one lemon
- Pinch of salt
Preparation method:
1. Preheat the oven to 180º C. Sift the flour, baking soda and salt into a large bowl. Add the sugar and wheat germ, mix, and make a well in the centre.
2. In another bowl, lightly beat the yogurt, oil, vanilla, lemon juice and zest. Pour the mixture into the well and mix until combined. Finally, mix in the blueberries.
3. Pour the mixture into a greased muffin tin. Place in the oven and bake for 20 minutes or until golden on top.
