Mum’s No Bake Chocolate Biscuit Cake
If someone asked me what was my favourite food as a child, this will definitely be among the first in the rankings. Universal joy always came upon us, when mum was making this no bake chocolate biscuit cake and we devoured it for breakfast…
Ingredients for No Bake Chocolate Biscuit Cake:
- 500 g digestive biscuits
- 250 g butter
- 250 g milk
- 200 g sugar
- 3 eggs
- 3 Tbsl. cocoa
- 2-3 tsp. rum or cognac
- ½ tsp. vanilla
- Rind of one lemon
- 50-100 g walnuts (optional)
Preparation:
- Heat the milk on the stove and remove just before bringing to boil. Set aside to cool.
- Crush all biscuits into a large bowl. (Break by hand or in a food processor in small portions. Process briefly, leave the crumbs bigger.)
- Whisk the eggs in a small bowl. Gradually add the soft butter, sugar, sifted cocoa, walnuts (optional), vanilla and rum.
- Add the lemon rind to the biscuits. On top pour the already cooled-down milk and stir. Mix in the cocoa mixture.
- Pour the batter in a cake tin or a tray with 22-26 cm diameter. Refrigerate for the night and in the morning you’ll have a breakfast that will be appreciated by old and young.
