There are lots of different recipes for Linzer cookies but the common thing among all of them is that they are very quick and easy to prepare. They last for a very long time and can be preserved in a box. We made these adorable heart shaped cookies for St. Valentine’s Day but you can use whatever cookie cutter you like and make them for any holiday. These cookies are very tasty even without icing and are a great complimentary dessert.
Ingredients for 45 heart shaped cookies:
- 360 g flour
- 250 g butter
- 120 g sugar
- 1 egg
- 1 tsp. vanilla
- ¼ tsp. salt
Ingredients for the chocolate icing:
- 150 g white chocolate
- 20 g butter
- red food colour
- desiccated coconut
Preparation:
- Melt the butter in a water bath. Stir in the sugar, salt and vanilla.
- Put the flour in a bowl. Add in the egg and the butter mixture. Knead a soft dough.
- Wrap the dough in a cling film and leave in the fridge for at least half an hour.
- Preheat the oven to 180°C.
- Take the dough out of the fridge and roll out between two sheets of baking parchment to a thickness of 0.5 cm.
- Remove the upper sheet of baking paper. Cut out the cookies using heart shaped cookie cutters and remove the excessive dough for another batch. Repeat the procedure until you run out of dough.
- Bake the heart cookies for about 15 minutes. (The baking time depends on the thickness and the size of the cookies.) Remove from the oven and leave aside until completely cool.
- For the icing melt the chocolate and the butter in a water bath. Gradually stir in the red food colour until you reach the desired colour.
- Dip half of each cookie in the chocolate glaze and sprinkle with desiccated coconut before the chocolate icing has hardened. Leave aside until the chocolate has set completely.
Suggestion: For the icing you can also use milk or dark chocolate and sprinkle with ground nuts (pistachio, almonds, hazelnut, walnuts, etc.)
