We found an old little recipe for star sandwich cookies that we have made a long time ago but somehow, we never published. Of course, it’s not necessary to use star shaped cookie cutters, you can customise this cookie recipe according to the cookie cutter shapes you have and adjust them to all holidays or occasions that may arise. You can also change the jam to your favourite or just make them with mixed flavours.
For this recipe it is very important to obtain a very soft cookie dough. If you prefer, you can even replace the softened butter with margarine. If the dough still isn’t too soft, you can add a little bit more butter, and if it too soft – add a pinch of flour.
Ingredients for 20-25 jam sandwich star cookies:
- 300 g flour
- 125 g butter, softened (or 150 g margarine)
- 125 g caster sugar
- 1 egg
- ½ tsp. vanilla
- 125 g apricot jam (can be replaced with raspberry, strawberry, plum or rosehip jam)
- Powdered sugar for sprinkling
Preparation:
- Sift the flour into a bowl and add the egg and vanilla.
- Melt the butter in a water bath. Stir in the sugar until completely dissolved. Pour the butter mixture into flour.
- Knead a soft dough, wrap it in cling film and let it stand in the fridge for at least half an hour.
- Preheat the oven to 180° C.
- Place the dough on a baking sheet. Cover with cling film and roll into a sheet with a thickness of about ½ cm.
- Carefully remove the cling film and cut out the star cookies. Using smaller star shaped or round cookie cutters, cut out the middle of half of the cookies.
- Shape the remaining dough into ball, roll again and repeat the procedure until you run out of dough.
- Bake for about 15 minutes. The star cookies are ready when they are still white, but they are starting to get a light tan near the edges. Remove the baking tray and set aside until cool.
- Blend the apricot jam (or a flavour of your choosing), then transfer into a sauce pan and heat in a water bath.
- Smear jam over the star cookies that haven’t been cut out in the middle, then sandwich them with the rest of the cookies with a “whole” in the middle and fill in with more jam.

Tip: Use medium or large cookie cutters as the dough is very soft and if you are using smaller cookie cutters, their shape will get spoiled during baking, and the area for the jam filling will be significantly reduced. You can sprinkle with powdered sugar before serving.
