Granny’s Easter Bunny Cookies
(Easy Version Recipe)
Easter is around the corner and lot of people are wondering how many things they will have a chance to make, will they have enough time, what will the holiday table look like and how to surprise their children and guests. Granny’s Easter Bunny Cookies are super easy to make, look super cute and you can make them a week in advance. Just store them in a box, put it in a plastic carrier bag and the Easter Bunnies will remain soft and tangy.
Ingredients for 60 Easter Bunnies:
- 500 g all purpose flour
- 165 g yogurt
- 145 g sugar
- 100 ml. sunflower oil
- 2 eggs
- 2 tsp. vanilla essence
- ½ tsp. baking soda
Preparation:
- Put the baking soda in the yogurt and mix.
- In a bowl, whisk the eggs together. Mix in the sugar.
- Add in the yogurt, sunflower oil and vanilla.
- Gradually add the flour. Knead a soft dough on a lightly floured work surface.
- Preheat the oven to 180ºС. Line a large baking tray with parchment paper.
- Shape balls with the size of a walnut and place them on the baking tray leaving space between them.
- Using scissors cut “bunny ears” as shown on the picture below. With a wooden skewer press the middle to shape the ears.
- Using the blunt side of the wooden skewer poke two wholes for eyes and one more whole on the back side where the bunny tail will be placed. For the fluffy tail, shape a little ball. Flatten one side of it to make it pointy and place in the whole Lightly press with fingers to make sure it won’t fall off.
- Bake for about 15 minutes.
