Dark Chocolate Cherry Cookies
It turned out that the cherries we picked with Harry and mum have no end… After I made mini cherry pies and cherry cake, there were still so many remaining, that I could bake one more thing. And since the just mentioned recipes were so heavenly delicious, I decided to make something brave and totally different! I have actually never had cherry cookies so I wanted to check out if there is a reason for that – perhaps they are not suitable for such a dessert?
I made up a recipe, the dough looked kind of ok, the cookies looked relatively ordinary… and then I tried them. These dark chocolate cherry cookies are one of the most indulgent and sublime desserts I’ve ever had. Definitely try them out while the cherries are still in season.
Ingredients for about 25 dark chocolate cherry cookies:
- 175 g flour
- 125 g butter, room temperature
- 100 g sugar
- 100 g cherries
- 85 g dark chocolate chips/grated chocolate
- 1 egg
- 1 tsp vanilla
- 1 tbsp cornstarch
- ½ tsp baking powder
Preparation:
- Preheat the oven to165°С. Wash and pit the cherries, then cut them in halves.
- In a big bowl, mix together the butter and sugar.
- Stir in the egg, vanilla and cornstarch.
- Sift the flour and baking powder into a separate bowl. Gradually add them to the butter mixture.
- Add in the chocolate chips and cherries, and stir until well combined.
- Line a large baking tray with parchment paper.
- With a spoon, scoop out a dough ball with the size of a walnut and place it onto the tray. Repeat the procedure until you run out of dough. Don’t forget to leave enough space between the cherry cookies as they will spread and flatten during baking.
- Bake for about 10 minutes or until golden. Leave the dark chocolate cookies to cool for 5-10 minutes and then transfer onto a cooling rack until completely cool.

Tip: Use an ice cream scoop to make the cookie dough balls. If you don’t have any, just use a regular tea spoon to scoop them out, and another one to shape them.
