Making these Christmas Vanilla Cookies is quick, easy and fun for both adults and children. You don’t have to make them only for Christmas, they’re good at any time of the year and are perfect for cutting out. They’re scrumptious even without any icing or decoration, and can last for months if stored in a box. You can even wrap them up as a gift.
Ingredients for Christmas Vanilla Cookies:
- 225 g flour
- 110 g butter, softened
- 100 g brown sugar
- 20 g vanilla sugar
- 1 egg
- ½ tsp baking powder
- ½ tsp vanilla essence
- ¼ tsp salt
Preparation:
- Sift the flour and baking powder.
- Mix the egg in a large bowl.
- In a separate bowl, mix together the butter, sugar, vanilla sugar, salt and vanilla essence. Add the butter mixture to the egg and mix together until combined.
- Gradually add the flour to make the dough. Knead by hand.
- Form the vanilla dough into a ball and wrap in cling film. Place in the fridge for at least an hour.
- Preheat the oven to 200°C.
- Take the dough out of the fridge, and leave it for a few minutes to soften. Roll out the dough between two sheets of baking paper until it’s 0.5 cm thick. Cut out the cookies. Gather the remaining dough, shape it into a ball and roll out again. Repeat the procedure until you run out of dough.
- Line a large baking tray with parchment paper and place the cookies onto the tray. Don’t forget to leave space between the Vanilla Cookies. Bake for 5-8 minutes, until golden.
- Leave the Christmas vanilla cookies to cool down for 2-3 minutes, then transfer them onto a cooling rack until completely cool.
