Lately we’ve been making lots of cookies as they are relatively easy to prepare, look very beautiful, they’re ideal if you want to eat something sweet, but don’t want to be heavy-handed, and the variety is endless! We added Amaretto liqueur to the dough that makes the chocolate whoopee pies very aromatic, and the filling is very smooth, it consists of mascarpone cheese and raspberries. This recipe makes 55 sandwiched cookies, which is perfect if you want to surprise your colleagues at work.
Ingredients for about 55 Chocolate Raspberry Whoopie Pies:
- 280 g flour
- 225 g butter, softened
- 110 g sugar
- 20 гg cocoa
- 1 egg
- 1 tbsp. Amaretto liqueur
- 1 tsp. baking powder
- ½ tsp. vanilla
- ¼ tsp. salt
Ingredients for the raspberry mascarpone filling:
- 250g mascarpone cheese
- 75 g icing sugar
- 60 g frozen raspberries (or 40 g fresh raspberries)
- ½ tsp. vanilla
Preparation:
- In a bowl, beat in the softened butter and the sugar until a smooth mixture forms.
- Mix in the egg, salt, Amaretto and vanilla..
- Sift the flour, baking powder and cocoa into a separate bowl. Gradually add them to the butter mixture.
- Preheat the oven to 180ºС. Line a baking tray with a baking parchment.
- Shape little balls (not much bigger than a hazelnut) with your fingertips and place them on the baking tin. Leave space between the cookies on the baking sheet so they have room to spread out.
- Lightly press the whoopie pies before baking. Bake for about 8-9 minutes.
- Remove from the oven and set aside for a few minutes to cool. They are very fragile and easy to break.
- To make the whoopie pie filling, beat the mascarpone cheese, icing sugar and vanilla in a bowl.
- Mix in the raspberries.
- Take half a teaspoon of raspberry filling and sandwich it in between two whoopie pie shells. repeat until you run out of whoopie pie cookies.

Tip: Making so many whoopie pie cookies requires time so if you like, you can make them bigger. If you would like to do so, shape bigger balls and press them lightly with the bottom of a glass. Be careful not to flatten them too much or they may become too fragile to handle.
