Chocolate Cookies
This is one of those special recipes that belongs to the category “much-tastier-than-it-looks-like”. These chocolate cookies look a little bit plain, insignificant even, but after you try them you you will definitely want to eat one more, and another one after that, and another… They are super easy to make – you just mix everything together and that’s it. And you don’t even need to shape them or cut them out, or anything like that, they spread evenly during baking. If you have all the ingredients (and you’ve probably already got them) you will need no more than 15 minutes to put the first baking tray in the oven!
When, how and what with you’re going to enjoy these chocolate cookies is entirely your business, but we recommend you to have them with a strong espresso, dip them into a hot cappuccino, cold milk, aroma tea or crumble them onto ice cream for a deliciously simple dessert.
Ingredients for 35 big cookies:
- 200 g flour
- 200 g butter, softened
- 175 g sugar
- 50 g milk or dark chocolate
- 30 g cocoa
- 30 g corn starch
- 2 eggs
- 1 tbsp. baking powder
- 1 tsp. vanilla essence
Preparation:
- Preheat the oven to 180°C.
- Cut the butter into cubes and put it in a bowl. Mix in the sugar.
- Add in the eggs and vanilla essence.
- Sift the flour, cocoa, corn starch and baking powder. Gradually add them to the mixture.
- Chop the chocolate (or use chocolate chips) and add it to the cookie dough.
- Line a baking tray with parchment paper.
- Take a teaspoon of the cookie dough and place it onto the baking tray. You don’t need to shape it, it will spread evenly during baking. Leave 2-3 cm between the cookies. Repeat the procedure until you run out of dough.
- Bake for about 12 minutes. Makes 35 chocolate cookies.
- You don’t need to wait for the cookies to cool completely. You can have them even when they are nicely warm.
