Savoury Cake with Feta

Savoury Cake

A long time ago me and my sister were on a food separation diet. Weird, I know, huh? I totally hated it, I was constantly looking at my watch checking whether it is time for me to eat again. Something I have never cared about prior to that. I remember when I was still a teenager who, when staying at home, was spending all her time chatting on different mIRC channels and icq (I don’t think I will ever forget the monkey sound icq made every time I got a message!) mostly with my classmates and my friends from the Star Wars forum. Did I ever mention to you how geeky I am?

So anyway, I was spending hours every evening talking to about 10 to 20 different people, and was getting so profound in my messages that I was often forgetting that I had to eat. And if it wasn’t for my mum to shout from the kitchen “The dinner is ready!”, I think I would’ve skipped it many a time. And one day, just like that, I decided to go on a diet. Big mistake. You have no idea how much I regretted it after that, it just kept my mind primarily occupied with food thoughts.

There was only one good thing that came out of  this diet, and that was that we started cooking, baking and experimenting more. We have changed this recipe a bit throughout the years as we just wanted to have a super cool savoury cake with feta cheese and herbs. It’s the perfect breakfast but you can also have it as an afternoon snack. Savoury Cake Recipe

Ingredients:

  • 150 g flour
  • 100 g feta cheese
  • 100 g yogurt
  • 80 ml olive oil
  • 50 g Cheddar cheese (or similar)
  • 2 eggs
  • 2 tbsp. savory
  • 1 tsp. baking soda

Savoury Cake Ingredients

Preparation:

  1. Preheat the oven to 180ºC. Grease or line a bread tin with parchment paper.
  2. Crumble the feta cheese. Grate the Cheddar cheese and set 1 tablespoon of it aside.
  3. Pour the yogurt into a bowl and stir in the baking soda.
  4. In a separate bowl, whisk the eggs.
  5. Put the flour into a big bowl. Mix in all other ingredients.Savoury Cake Batter
  6. Pour the savoury cake batter into the baking tin and bake for about 20 minutes – a crust will start to form. Cover with foil and bake for further 20 minutes. Take the savoury cake out of the oven, sprinkle with the remaining cheese and bake for about 10 more minutes or until the cheese melts and the bread has a nice golden colour.
